Mom's infamous Banana Bread recipe.

Ever since I was a little girl, I can remember the sweet, sweet smell of mom’s banana bread baking in the oven. This delicious aroma nurtures so many unforgettable memories.

To celebrate this Mother’s Day, I would like to share this recipe with you. It’s so easy and you really cannot go wrong! 

Best served fresh out the oven with melted butter and a cup of hot rooibos tea.

1/2 cup of butter 
1 cup of sugar
3 over-ripe bananas 
2 cups of flour
1/2 cup of milk
3/4 tsp of bicarbonate of soda
1 tsp vanilla essence
1/2 tsp baking powder 
2 eggs
Pinch of salt

Preheat oven to 180 degrees.

Cream butter and sugar well. Add in the mashed bananas.
Dissolve soda in milk. 
Add flour a little at a time and mix well, also add the baking powder.
Add eggs and beat in well.
Drop in a pinch of salt and the vanilla essence.
Lastly add the milk and soda and mix well.
Grease and flour the loaf tin, and slowly pour the batter into the loaf tin.
Bake in the oven for 1 - 1,5 hours. After 1 hour, test the loaf, if still moist in the centre, then continue baking. When done, switch off the oven and leave the loaf for +/- 2 minutes. Take out the banana loaf, leave to cool and then turn on the cake rack.
